Welcome back to week 88!
I once again find myself late in the week! This week has been deliciously “in between”, an amalgamation of cooking and resting and traveling back to Pennsylvania. I was sad to leave home and the full house there, but am glad to be preparing for our trip next week and settling back in. We attended our final holiday parties, I watched The Holiday for the 15th time with Casey, and fell asleep by 11pm on New Year’s Eve. We also set our family New Year’s Resolutions
This coming week we are prepping and then leaving for Utah! I am oddly nervous about this trip but excited to be out west. I also plan to see a festive movie, cook even more, and (hopefully) finish another book.

Started and finished Happiness for Beginners - this was the story of a 32-year old woman who set out for the Wyoming wilderness to reinvent herself. It was light, fluffy, and kept me interested, but I expected more actual wilderness content? It was more like a flyover, rom-com version, which I can still appreciate.
Cooked:
Run Fast Eat Slow Purple Cabbage Slaw - honestly, not a make again for me. It was good but too similar to a creamy pot luck-style coleslaw (I should have known).
Run Fast Eat Slow Pulled Chicken - SO GOOD, so easy and a great excuse to pull out my grandmother’s Crock Pot!
Cabbage soup with kielbasa to celebrate New Year’s - I used the base recipe linked, left the lemon out, and added some seared kielbasa and smoked paprika.
Homemade almond butter with cinnamon and a bit of maple syrup
Healthier Thumbprint cookies with various jams
A holiday frittata
ANOTHER Kale Caesar to go to another Christmas party
