Welcome back to week 90!
This past week, we traveled back from Utah and started our last semester of class. It’s always difficult to settle into a completely new routine and even more so without knowing what we are really preparing ourselves for (not knowing where in the country we’ll live). That being said, the small joys of the week included lots of laughter and catching up with friends, seemingly ENDLESS snow, early morning swims (first week of half ironman training!!!), cooking, and interesting new classes. I’m taking a Negotiations class for the first time and I can already tell it is about to be rife with intentional conflict and aggression (my nightmare) but tons of important lessons too.
This coming week, we are continuing to settle in. I’m hoping to completely heal whatever is happening with my ankle and get back to fully running, set up a cycling trainer borrowed from a friend (I have no idea what I am doing), and read a bit more. I’d also like to cook something fun and pick a day to host people for dinner. Exciting stuff!
Other Things/Reads: ❄️
Started Momfluencers - idk, I might not finish this one. I went in blind and it has some good perspectives but feels a little stale and self righteous. None of the ideas feel new to me. I don’t even remember where I got this recommendation, haha. Wouldn’t recommend.
Read a sample from Who You Were Meant to Be by Lindsay Gibson, a self-help style book written by a psychologist as a guide for those getting back in touch with their “authentic selves”. I liked this quote “You are choosing every day what kind of force you are going to be in the world: a force for growth or a force for resignation.” I also liked the “Right Purpose” checklist below.
Cooked:
An apple, beet, feta, walnut, kale, and julienned broccoli stalk salad with a balsamic vinaigrette - why have I not been putting thin slices of apples in all salads?? So good.
Beef stew! Honestly amazing. I doubled the recipe, and afterwards I saw a comment to add a bag of frozen peas at the end and experienced pea FOMO.
Chili, what else. I made up the recipe as a went and it was my best yet - added fire roasted tomatoes and extra kidney beans.
Prepped hard boiled eggs, roasted brussels sprouts and broccoli, and chopped veggies for the week.
See ya next week,
Caroline
